Recipes From Bradlo

Pastries, Walnut Crescents ( Rozky)

Dough

4 cups (Red Roses) Flour or equiv.
1 pint Cream , 10 % is fine ,4 egg yolks
1 pkg dry yeast
1 lb. Butter
* Soften the yeast in a little warmed cream.
Sprinkle 1 spoon of sugar on top of yeast and set aside.
Form a dough with softened butter, flour and egg yolks.
Add yeast mixture, add cream, Knead until it is smooth dough. Put in Bowl and cover.
* Let dough rise in refrigerator over night.

Filling

1 Lb. Ground Walnuts
3 eggs.
Cinnamon and sugar to taste
Heat oven to 350 degrees farenheight
Roll out part of the dough very thin , leaving the balance in the fridge as needed.
Cut into diamond shapes or squares approx. 2 inch squares using a sharp knife.
Place a teaspoon full of filling at one end of dough and roll into a crescent or square pinching end to hold .Dip crescents into slightly beaten egg whites and place on greased pans. Bake until golden.

Halusky

Just reading Emily’s recipes makes us hungry.

It also brings back memories of how many of our Slovak mothers performed magic when the cupboard was bare and they faced the big spoons and empty stomachs of a hungry family. They would turn to our Slovak Dish of Halusky. A potato and Flour dish that could be topped with fried cabbage, Skvarky, or cottage cheese. The Halusky dish is certainly the equivalent of today’s Kraft dinner but it is much nicer. We challenge readers of this news letter to submit their favourite recipes of this great dish and special toppings.

In the pages of The Slovakia Heritage Magazine, 151 Colebrook Drive, Rochester, New York, 14617-2215, USA, Dec. 1994 issue, is a recipe for Halusky from by Igor Gazdik.
